Illustrator was designed to create and edit vector-base images. Therefore, its vector capabilities are incomparable to the limited options offered in other Adobe software.
As vector artworks, Illustrator also creates images that are scalable to as small or large as needed and it retains the resolution. This is highly important for large prints or if there is a need to enlarge your artwork; blurring will not occur as oppose to using a raster-based software.
Illustrator has a more extensive type tool that allows greater manipulation of text. For example being able to manipulate individual anchor points of each letter style; create outlines to convert text to an editable vector; and the type on a path option.
The drawing capabilities of Illustrator are simply more powerful. The pen tool for example works wonders in Illustrator. Plus there are tons of amazing features such as the pathfinder panel that add versatility in creating images.
